Fried Chicken with Spicy Peanut Sauce Recipe:
Ingredients
7 oz. fettuccine pasta, or other pasta
4 boneless skinless chicken breast fillets
1/3 cup plus 3 Tbsps. flour, approximately
2 eggs, lightly beaten
2/3 cup plus 2 Tbsps. packaged breadcrumbs, approximately
1/4 cup olive oil
2 Tbsps. plus 2 tsps. olive oil
1 onion\cooked, finely chopped
1 clove garlic, crushed
2 tsps. curry powder
1/2 tsp. turmeric
1 cup water
1 tsp. white vinegar
2 tsps. sugar
1/4 cup smooth peanut butter
1 carrot\raw, cut into thin strips
1/2 small leeks\raw, cut into thin strips
1 small red pepper, cut into thin strips
Instructions
Cook pasta in a large pan of boiling water 10 minutes, or until al dente. Drain and keep warm. Toss chicken in flour, shaking away excess flour. Dip chicken in eggs, then breadcrumbs. Heat oil in a heavy nonstick pan over medium high heat. Add chicken. Cook until well browned and cooked throughout. Heat next oil in pan and add onion and garlic. Cook, stirring, until onion is soft. Stir in curry and turmeric and cook 1 minute. Stir in next 4 ingredients, and continue stirring until sauce boils and thickens. Serve chicken hot with pasta, uncooked vegetable strips and hot sauce.
