Southern Fried Chicken Recipe:
Ingredients
1 whole chicken, quartered
1 cup all purpose flour
1 tsp. poultry seasoning
1/2 tsp. dried basil
1/2 tsp. pepper
2 cups cracker crumbs
2 eggs
1/3 cup milk
vegetable oil
salt, to taste
Instructions
Preheat oven to temperature 350°F. Combine flour, poultry seasoning, basil, and pepper. Mound on a plate or wax paper. Make another mound of cracker crumbs. Beat the eggs lightly with milk. In a large skillet heat 1 inch of oil. Dredge chicken pieces in flour, shake off excess, and dip in egg mixture. Finish by rolling the chicken in cracker crumbs, thoroughly coating all surfaces. Fry pieces to rich, golden brown on both sides, turning once. Transfer fried pieces to an ovenproof dish. Take care not to break the crust. Bake for 20 to 30 minutes or until chicken is cooked through.
